Classic Toasties
Ingredients
2 slices of brown bread
2 slices of black pepper ham
2 tbsp of baked beans
2 tbsp of grated cheddar cheese or 1 slice of sliced Cheddar
about 15g of unsalted butter (cut into small cubes)

Instructions
Cut off the crust of two slices of brown bread. Cut two slices of ham diagonally to get four triangular shaped ham. I used black pepper ham this time. If I use normal ham, I would put a little bit of black pepper on the baked beans.

Turn on the toastie maker, put a small cube of butter on it. Brush the melted butter all over the inside of the toastie maker. Lay one slice of bread on the toastie maker, then put one layer of ham on top of the bread and leave a gap between the two pieces of triangular ham. Put one tablespoon of baked beans on top of each piece of ham. Then put all the grated cheddar on the baked beans. Put one more layer of ham on the cheese and cover with another piece of bread.

Close the toastie maker and let it cook for about 5 minutes. Open the toastie maker and brush the toastie with more butter and close it again. Cook for another 3 minutes. The toastie would be golden brown and crispy.

Mushroom Toasties
Ingredients
2 slices of brown bread
3 button mushroom
1/4 white onion
1 string of fresh thyme or a pinch of dry thyme
a pinch of black pepper
1 slice of cheddar cheese or 2 tbsp of grated cheddar cheese
1 tbsp grated parmesan cheese
1.5 tbsp of extra virgin olive oil
about 15g of unsalted butter (cut into small cubes)

Instructions
Cut off the crust of two slices of brown bread. Clean and slice three button mushrooms. Do not wash the mushrooms or the toastie stuffing would be too watery. Brush it with a piece of clean cloth or a soft brush. Peel and chop a quarter of a white onion. Cut one slice of Cheddar cheese diagonally to get two triangular shaped of cheese.

Heat up 1.5 tbsp olive oil and a knob of butter (about 5g) in a pan, add chopped onion and stir for about 1 minute. Then add the sliced mushroom and stir for 1 more minute. Pick the fresh thyme and put in the pan. Stir and add a pinch of black pepper. Once the sliced mushrooms are slightly coloured, pour them in a bowl. Don’t overcook the mushroom or it would be too watery and lose the texture.

Turn on the toastie maker, put a small cube of butter on it. Brush the melted butter all over the inside of the toastie maker. Lay one slice of bread on the toastie maker, put the cooked mushroom on top. Then put the Parmesan and sliced Cheddar or grated Cheddar on the mushroom and cover it with another slice of bread. Close the toastie maker and let it cook for about 5 minutes. Open the toastie maker and brush the toastie with more butter and close it again. Cook for another 3 minutes. The golden brown and crispy toasty is ready to serve.
