Three Healthy Breakfast Recipes for Work or School

Episode two of Meal Mondays! How to make Raspberry Chia Pudding, Peanut Butter Steel Cut Oats, and Healthy Banana Bread. Read below for details!

Raspberry Chia Pudding:
Compine 1 tbsp sweetener, 1 cup of fresh raspberries, 1 cup of milk and 1/4 cup of chia seeds and mix well. Let sit in fridge overnight.

Steel Cut Oats:
After toasting, add 3 cups of water to steel cut oats in saucepan, add 1/4 tsp of salt. Bring to a boil, turn down to a simmer for 20 minutes. Cover and let cool. Serve as desired, microwaving with milk to warm up.

Healthy Banana Bread Ingredients:

4 ripe thawed bananas
2 cups all-purpose flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup melted butter
1/2 cup sugar of your choice (I used coconut sugar)
2 large eggs
1 tsp vanilla
1 tbsp milk or more as needed
1 cup chopped nuts, I used pecans
1/4 cup dark chocolate chips
*Bake in a 9×4 loaf pan at 325 degrees F. for about 1 hour 10 minutes.

Combine all wet ingredients, add all dry ingredients. Pour into oiled loaf pan and bake until the center does not leave batter on a butter knife.
