Healthy School Breakfast Ideas: Fall Edition!

Pumpkin Spice Latte
1 1/2 cups almond milk
1/2 cup coffee
1 1/2 Tbsp pumpkin puree
1/2 tsp Pumpkin Pie Spice
1/2 tsp vanilla extract
sweetener (honey, stevia…)
mix all ingredients. heat and serve.

Pumpkin Pancakes
2 eggs
whole mashed banana
1/4 cup pumpkin puree
1 Tbs coconut oil (or organic butter ~ yes butter & oil are healthy for you! Healthy fats are good for your skin & brain! try to stear clear of margarine and aim for organic butter)
1/2 teaspoon vanilla extract
1/2 teaspoon Pumpkin Pie Spice
dash cinnamon
pinch baking soda
mix all ingredients. cook on med heat. flip when bubbly.

Pumpkin Spice Muffins
1/2 cup almond butter
1/4 cup pumpkin puree
1 egg
pinch baking soda
pinch sea salt
1/2 Tbs Pumpkin Pie Spice
3 tablespoons Maple Syrup (Maple syrup is one of the HEALTHIEST things you can eat ~ it’s rich in Zinc and boosts your immune system (perfect for this time of year when getting a cold seems to be happening to all of us!) It’s anti-inflammatory properties help fight off cancer, helps muscle recovery, and is abundant in calcium! keep in mind that maple syrup is sugar – it’s only good in moderation. Add a few tablespoons into these muffins & drizzle some on your pumpkin pancakes…enjoy this wonderful sweet that God made for us :)
bake @ 350 for 20 mins

Apple Sauce
5-6 apples
2 Tbs Honey
dash cinnamon
3/4 cup water
place all ingredients in pan. cover for 20 mins on med heat or until soft. mash & serve.
