RECIPE: Fruity Fruit Sauce

5 – 6 cups fruit, diced, sliced, or whole (small fruits) (fresh or frozen)*
1 – 12 ounce can apple juice concentrate
1½ cup water (divided)
⅓ cup cornstarch
*Fruit Possibilities (choose one):

1: Place fruit, juice concentrate and 1 cup water in a saucepan. Stir.
2: Place pan over high heat until mixture begins to boil. Stir occasionally.
3: Reduce heat and simmer for about 5 minutes.
4: While mixture is simmering, mix cornstarch with 1/2 cup water. Stir until cornstarch is dissolved.
5: After fruit mixture finishes simmering, remove from the heat and slowly stir in dissolved cornstarch.
6: Return pan to medium-high heat and bring mixture to a boil. Reduce heat and stir until the fruit sauce becomes thick. The sauce will continue to thicken as it cools.

You may substitute another variety of juice concentrate for the apple. Choose one that compliments the fruit you are using. Some good choices are purple or white grape, and raspberry.

If you add the cornstarch mixture to the fruit sauce to quickly you may get lumps.

Some good choices of fruit are strawberries, blueberries, blackberries, apricots, peaches, mangoes, cherries, apples, and pears.

You can also mix fresh and frozen fruit.
