A really quick, easy recipe for healthy muffins that are brilliant for on-the-go, post workout or breakfast! :) I love these! Try them out! Got the recipe from Irish social entrepreneur Avril Clarke’s ‘BETTER THAN NOODLES’ which was set up to get students eating healthier food :) Check out the links:

RECIPE/METHOD:

250g Oats
250g Strawberry Yoghurt
2-3 tbsps Honey
2 Eggs
2 Bananas
1 1/2 tsp baking powder
1/2 tsp baking soda

Preheat oven to 200•C
Grease muffin tin
Whizz oats in a blender
Mash bananas
Mix all ingredients
Scoop into muffin tray
Bake for 25 minutes
