Recently I have been loving alternating two breakfast ideas; a rice parfait and some overnight oats! Both of these DIY breakfasts are quick and easy and perfect if you’re on the go (especially if you make the breakfasts in jars like I did!). They are perfect for school or work and are also great if you’re usually short on time in the mornings, you can just meal prep a few ahead of time. If you’re on a budget these healthy breakfasts will be perfect for you as they use kitchen staples like rice and rolled oats and the fresh fruit can be switched for frozen!

– Rice (I would recommend using Jasmine rice but I used Basmati rice)
– Peaches (Swap the fruit in or out to your preference)
– Coconut Yoghurt (Or whatever you prefer)
– Chia Seeds
– 2/3 cup of Rolled Oats
– 1 1/2 tbsp of Chia Seeds
– 1 Cup of Coconut Milk (Or the milk/liquid of your choice) & extra for the next day.
– Maple Syrup
– Pepitas / Pumpkin seeds
