We’re making breakfast! In my 2 week uploading break I filmed some breakfasts that I had been making a lot. We have chocolate pancakes, cheese & tomato toast, almond butter and banana toast, and two kinds of crepes. Safe to say I have been eating good, and now you can too! Recipes below. Enjoy the video!

Chocolate Pancakes:
1 cup all-purpose flour
2 tbsp sugar
2 tsp baking powder
1 cup almond or soy milk
2 tbsp oil
1 vegan egg (or flax egg)
2 tbsp cocoa powder
strawberries and maple syrup to top.

Whisk together dry ingredients. Add wet ingredients to dry and stir to combine. Some lumps are okay. Don’t over-mix or it will get gummy! Cook in a frying pan on medium heat for about 3-4 minutes, until bubbles appear on the surface and then burst. Then flip and cook about 1 minute on the other side. Top with strawberries and maple syrup.

I love using sourdough bread, then topping it with Daiya gouda flavour cheese and tomatoes. I also love Justin’s almond butter (vanilla flavour) and banana slices.

Crepes Basic Recipe:
1 cup flour
1 cup + 1 tbsp almond milk
3 tbsp oil

Crepe Variations:

Spinach & Cheese Crepes:
1/4 cup spinach, finely shredded
salt & pepper to taste
shredded vegan cheese for the inside

Sweet Crepes:
1/4 tsp vanilla
1-2 tbsp sugar
almond butter & fruit for the inside
maple syrup
also good with chocolate hazelnut butter or chocolate chips

Whisk together crepe ingredients. Pour into a non-stick pan on medium heat in a VERY thin layer. When it looks almost cooked on top (takes about 1-2 minutes) flip and cook about 30 seconds to 1 minute on the other side.
