3 Healthy Breakfast Ideas | (Easy & Vegan Fall Recipes)

Today on Allie’s World it is How to Tuesday and I am sharing with you 3 fall inspired vegan breakfast recipes!! These are quick and easy vegan meals that you can prepare ahead of time!


Vegan Pumpkin Protein Pancakes

60g Plant Based Vanilla Protein Powder
1 cup Oats
1-1 1/2 cups Plant Milk (I used vanilla almond milk)
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Vanilla Extract
1/3 cup Canned Pumpkin (Not Pumpkin Pie filling)
1/2 tsp Pumpkin Pie Spice

Overnight Oats

Apple Pie:

1/2 Apple
Cinnamon & Nutmeg to taste
40g Oats
1 Tbsp Chia Seeds
1 tsp Maple Syrup
Handful of Walnuts (I toasted mine)
1/2 – 1 Cup Water

Pumpkin Pie:

1/4 tsp Pumpkin Pie Spice
1 heaping Tbsp Pure Pumpkin
40g Oats
1 Tbsp Chia Seeds
1/2 – 1 Cup Water
1/2 Apple
Handful of Walnuts (I toasted mine)
1 tsp Maple Syrup

Southwestern Tofu Scramble (Makes 2 servings):

170g Super Firm Tofu
1/4 cup Green Pepper
1/4 cup Onion
5-6 Grape Tomatoes halved
1 cup Baby Spinach
1/4 cup Poblano Pepper (Roasted)
1/4 cup Garbanzo Beans (or any bean)
1/4 cup Daiya Cheese (optional)

Spices: – (Please note that I eyeball everything but every spice should be about 1/2 tsp except for the turmeric and nutritional yeast)

Garlic Powder
Pinch Salt
Black Pepper to taste
1 tsp Turmeric
1 Tbsp Nutritional Yeast
